Recipe Review: Mini Frittatas with Ham and Cheese

Ingredients:

1 cup broccoli
2/3 cup chopped reduced-fat ham
2/3 cup spinach
2 teaspoons chopped garlic
1/3 cup shredded reduced-fat cheddar cheese
1/8 teaspoon dried thyme
1/8 teaspoon black pepper
4 large egg whites
1 large egg


Directions:

Preheat oven to 350 degrees.

Heat a medium skilled coated with cooking spray over medium-high heat.  Add diced ham and broccoli and sauté for 3 minutes. Add spinach and garlic and sauté 2 minutes. Remove from heat and cool 5 minutes.

Combine eggs, cheese, thyme and black pepper in a bowl and whisk. Add ham mixture, stirring with a whisk. Spoon mixture into 6 muffin cups coated with cooking spray.

Bake at 350 degrees for 20 minutes.




Ease of Preparation: The ingredients in this recipe are very easy to find and most are likely to already be in your refrigerator at home! The preparation process is trivial and takes all of 10 minutes. Because eggs cook so quickly, within twenty minutes these tasty little appetizers and morning-time treats are ready to serve.

Quality of Recipe: This recipe is quite flexible in regard to its ingredients. The veggies and meat used in this specific preparation can be swapped out for your favorites or added to. Other ingredients that could be added are mushrooms, onions, tomato or red peppers. Different cheese can also be used including Feta, Gouda, American or even Brie. There seems to be nothing wrong with this recipe and because it is so malleable, you can customize your frittata!




Taste: I was hesitant about trying these because I am not a huge egg fan; however, these were outstanding.  I was at first worried they would be bland but they packed a powerful flavor of garlic and fresh vegetables! These are perfect for a quick, protein-filled breakfast or as appetizers when entertaining. The preparation is so simple and even chefs new to the kitchen could make these easily.
